Delicata Squash
Spiced Delicata Squash Pudding
Ingredients
- One Delicata Squash for 2 people
- Maple syrup
- 1/2 + cup of nut milk or coconut milk
- 1/2 tsp cinnamon
- No more then 1 tsp total (can use cinnamon, ginger, allspice, nutmeg, only small pinch of clove)
Directions
- Roast whole squash for 30 to 40 minutes
- Remove from oven, let cool
- Once cooled, cut in half length wise, scrape seeds out
- Scrape pulp onto a plate, mash with fork a little (some people like pulp smooth, can use blender or food processor)
- Place mashed squash, milk spices and maple syrup in sauce pan
- Heat on medium for 10 minutes, stirring occasionally
- Add more milk if needed, should be slightly thick, not runny
- Serve in small bowls warm
