{"id":478,"date":"2015-11-30T00:19:03","date_gmt":"2015-11-30T00:19:03","guid":{"rendered":"https:\/\/old.thenextmeal.net\/?p=478"},"modified":"2015-11-30T01:29:18","modified_gmt":"2015-11-30T01:29:18","slug":"colored-bell-peppers-berbere-pasta","status":"publish","type":"post","link":"https:\/\/old.thenextmeal.net\/?p=478","title":{"rendered":"Colorful Bell Peppers Berbere Pasta"},"content":{"rendered":"<p>Berbere is an <strong>Ethiopian <\/strong>spice that can include &#8211; Paprika, Black Pepper, Coriander, Nutmeg, Ginger, Ajwain, Allspice, Birdseye Chili, Fenugreek, Cardamom, Clove, Himalayan Pink Salt, Onion, Garlic<\/p>\n<p>It has a strong, rich, deep, hot flavor.<\/p>\n<p>Most people think that almost everything tastes good fried.\u00a0 I think almost everything tastes good with pasta.\u00a0 So this is my Ethiopian pasta dish.\u00a0 It&#8217;s intense but so delicious.\u00a0 Goes great with wine or beer.\u00a0 Good bread helps with the heat.<\/p>\n<p><em>Colorful Bell Peppers Berbere Pasta<\/em><\/p>\n<h3><strong><em> Ingredients:<\/em><\/strong><\/h3>\n<ul>\n<li>1 T oil<\/li>\n<li>1T Berbere spice (less if you don\u2019t want it hot, more if you want it fiery)<\/li>\n<li>1 to 2 medium red, yellow, or orange peppers, quartered, thinly sliced<\/li>\n<li>5 cloves garlic<\/li>\n<li>\u00bd cup kale, finely chopped<\/li>\n<li>\u00bd cup tomato sauce with a little veggie broth 1\/8 to \u00bc cups<\/li>\n<li>10 grape tomatoes, cut into \u00bc inch sliced marinated in Braggs or salt when you start the dish<\/li>\n<li>Salt to taste<\/li>\n<li>2 to 3 T walnuts \u2013 chopped<\/li>\n<li>1 T capers \u2013 chopped<\/li>\n<li>\u00bd lb linguini pasta \u2013 broken in 2 inch pieces<\/li>\n<li>\u00bc cup Nutritional yeast<\/li>\n<\/ul>\n<p>Other Veggies can be added but peppers are great by themselves<br \/>\nMushrooms, Eggplant, Onions, Zucchini, Squash (all cut up small)<\/p>\n<p>Linguini or other medium size pasta works great!\u00a0 If pasta is to large (penne, macaroni, rotini), the pasta will take over and through off the balance.\u00a0 If pasta is two small (angle hair), the sauce &amp; spices take over and there is nothing to offset the strong flavor.<\/p>\n<p><strong><em>Key ingredients<\/em><\/strong> \u2013 Berbere, Tomato Sauce, colored peppers<\/p>\n<p>Secondary Ingredients \u2013 Garlic, Walnuts, Capers, Nutritional Yeast<\/p>\n<h3><strong><em>Directions:<\/em><\/strong><\/h3>\n<ul>\n<li>Cook pasta with a little salt<\/li>\n<li>Place Berbere and oil in a medium heated pan, cook for 1 min<\/li>\n<li>Add bell peppers with a pinch of salt, cook 3 min<\/li>\n<li>Add garlic, cook another 3 min (roasted garlic is Great)<\/li>\n<li>Add kale &amp; walnuts, cook 3 minutes<\/li>\n<li>Add tomato sauce and cut up tomatoes, cook 2 to\u00a03 minutes (don&#8217;t let sliced tomatoes break up)<\/li>\n<li>Add a little veggie broth if needed to thin pasta sauce<br \/>\n<span style=\"color: #ffffff;\">.<\/span><\/li>\n<li>Drain pasta, put in pan with peppers &#8211; mix<\/li>\n<li>Add capers, nutritional yeast, walnuts &#8211; stir<\/li>\n<li>Adjust salt if needed<\/li>\n<\/ul>\n<p><em>Serve with good red wine, salad, good bread <\/em><br \/>\n<em><strong>Servings:<\/strong> 2 &#8211; 4<\/em><\/p>\n","protected":false},"excerpt":{"rendered":"<p>Berbere is an Ethiopian spice that can include &#8211; Paprika, Black Pepper, Coriander, Nutmeg, Ginger, Ajwain, Allspice, Birdseye Chili, Fenugreek, Cardamom, Clove, Himalayan Pink Salt, Onion, Garlic It has a strong, rich, deep, hot flavor.
